Spicy Firecracker Chicken Stir Fry: A Flavor Explosion

Ingredients

  • 1.5 lbs boneless, skinless chicken breast, cut into bite-sized pieces
  • 2 tablespoons vegetable oil for stir frying
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup snap peas
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 3 green onions, chopped
  • 1 tablespoon sesame seeds for garnish

Directions

1.

In a small bowl, whisk together all firecracker sauce ingredients (soy sauce, sriracha, honey, rice vinegar, red pepper flakes, cornstarch, and water). Set the spicy sauce aside.

Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat until smoking hot.

Add the chicken pieces to the hot wok and stir fry for 5-6 minutes until golden brown and cooked through. Remove chicken and set aside.

4.

Add the remaining tablespoon of oil to the wok. Add minced garlic and grated ginger, stir frying for 30 seconds until fragrant.

Add the sliced bell peppers and snap peas to the wok. Stir fry the vegetables for 3-4 minutes until crisp-tender.

6.

Return the cooked chicken to the wok with the vegetables.

Pour the firecracker sauce over the chicken and vegetables. Toss everything together and cook for 2-3 minutes until the sauce thickens and coats everything evenly.

8.

Remove the spicy firecracker chicken stir fry from heat and garnish with chopped green onions and sesame seeds.

9.

Serve your firecracker chicken stir fry immediately over steamed rice or noodles for a complete meal.
